This is such a good idea for day old bread, buzz it up in the food processor and turn it into pangritata or "poor mans Parmesan" – a vegetarian friendly Parmesan at that ?! It's super simple to make too. Once you have your bread crumbs (mine is made with yummy rye bread from @thegoodloafbakery ), heat up some olive oil and cook the bread until it crisps up. Then, add lemon rind, chilli, capers and fresh parsley and sprinkle it over pasta and blanched broccoli. I finished mine off with a squeeze of lemon too.
