Made an E P I C Cauli + Mac + Cheese today using Camembert, Gruyere & Parmesan, plus homemade breadcrumbs from @theGoodloafbakery seedy sourdough bloom | RECIPE Ingredients: 2 cups of dried elbow pasta 1/4 cauliflower, diced finely 1 tablespoon of olive oil 1 small onion, diced 1-2 garlic cloves, crushed 1 teaspoon of dried tarragon 300mls of thickened cream 50g Gruyere, chopped/grated 60g Camembert, chopped 50g Parmesan, grated Handful of parsley, chopped 1/4 cup breadcrumb Method: Pre heat oven to 200 degrees/190 degrees fan forced. Cook pasta as per instructions on packet, less 1 minute. Add cauliflower into pasta water 3mins before draining. While pasta cooks heat oil in a pan on medium heat, add onion, garlic, tarragon, stir occasionally until translucent. Add cream and simmer. Add Camembert & Gruyere until melted. Add parsley, drained cooked cauliflower and pasta, and stir thoroughly for about 2 mins. Transfer into baking dish. Mix crumb and Parmesan cheese and then scatter over pasta. Bake for about 12 mins or until crumb is golden and crispy. Take a photo. ? EAT!

I love salads for lunch but sometimes they need a little extra oomph to turn them into a filling dinner. This one has kale (grown in our school garden), spinach, rocket, purple cabbage, butter beans, yellow capsicum, roasted sweet potato, roast capsicum, hemp seeds, Meredith Dairy goats cheese and is dressed with balsamic vinegar. This is such a good idea for day old bread, buzz it up in the food processor and turn it into pangritata or "poor mans Parmesan" - a vegetarian friendly Parmesan at that ?! It's super simple to make too. Once you have your bread crumbs (mine is made with yummy rye bread from @thegoodloafbakery ), heat up some olive oil and cook the bread until it crisps up. Then, add lemon rind, chilli, capers and fresh parsley and sprinkle it over pasta and blanched broccoli. I finished mine off with a squeeze of lemon too. Something a little different to pack in our lunches this week - layered picnic loaf. Made with a seedy loaf from @thegoodloafbakery and filled with pesto, chargrilled vegetables (yellow capsicum, zucchini and mushroom) as well as tomato and haloumi cheese. I've had this for dinner the last 2 nights and hubby also took a slice with his packed lunch today. And all the those extra crumbs? I used them on top of a pasta bake I made for the boy's dinner tonight. I even managed to catch the natural light for tonight's picture - just as the sun was setting ☀️ To make; Slice the top off and tear the filling out of the loaf leaving a crust / case. Grill the vegetables in a little olive oil, salt and pepper for 5-10 minutes on each side, allow to cool on paper towel. Take the skin off the capsicum. Cook haloumi in a pan until golden on each side. Spread the inside of the loaf with pesto then layer the other ingredients. Place the top back on the loaf, wrap in gladwrap and store in the fridge overnight (preferably with something heavy sitting on top of it to weigh it down. #lifeofavegetarian #vegetarian #vegetarianfood #vegetarianmeal #vegetarianmeal #thegoodloaf #goodloafgoodlife
