Made an E P I C Cauli + Mac + Cheese today using Camembert, Gruyere & Parmesan, plus homemade breadcrumbs from @theGoodloafbakery seedy sourdough bloom | RECIPE Ingredients:
2 cups of dried elbow pasta
1/4 cauliflower, diced finely
1 tablespoon of olive oil
1 small onion, diced
1-2 garlic cloves, crushed
1 teaspoon of dried tarragon 300mls of thickened cream
50g Gruyere, chopped/grated 60g Camembert, chopped
50g Parmesan, grated
Handful of parsley, chopped
1/4 cup breadcrumb
Method:
Pre heat oven to 200 degrees/190 degrees fan forced.
Cook pasta as per instructions on packet, less 1 minute. Add cauliflower into pasta water 3mins before draining. While pasta cooks heat oil in a pan on medium heat, add onion, garlic, tarragon, stir occasionally until translucent. Add cream and simmer. Add Camembert & Gruyere until melted. Add parsley, drained cooked cauliflower and pasta, and stir thoroughly for about 2 mins. Transfer into baking dish. Mix crumb and Parmesan cheese and then scatter over pasta. Bake for about 12
mins or until crumb is golden and crispy. Take a photo. ? EAT!
